I’m spoiled, I’ll admit it. There are bakers all over the city churning out loaf after loaf of delicious, artisan breads and I want biscuits. Biscuits in Spain are hard, cookie-like things that may or may not be sweet. So how do you enjoy biscuits in the land of bread? By tweaking my mother’s old recipe to make baking powder biscuits for two.
What makes a tender biscuit?
The best advice I can give is to treat the dough gently. When cutting the butter into the flour for example, work quickly so the butter doesn’t melt. Whether you use your fingers to pinch the butter in or a pastry cutter is up to you. If the butter is very cold you shouldn’t have a problem.
Many recipes recommend using whole milk to increase the amount of fat in the dough. For a small batch like this, I use the same 2% milk my husband uses for coffee, but you may want to consider whole milk if you double the recipe.
When it comes time to shape the dough, use your hands to coax and pat it into shape instead of using a rolling pin.
These biscuits come together quickly and take only 12 minutes to bake.
Ingredients
- 1 cup flour plus a little more for dusting
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 tablespoon butter, cut into small bits (you could grate the butter if you prefer)
- ½ cup milk
Instructions
- Preheat the oven to 400°F/200°C. Prepare a baking sheet with a small amount or oil or baking spray.
- Measure the dry ingredients into a mixing bowl and stir to combine.
- Measure out the milk and set aside.
- Add the butter and use your fingers to pinch it into the flour.
- Add the milk and mix well. The dough will be very wet.
- Dust a flat surface with a small amount of flour and turn the dough out onto it.
- Dust a little more flour on the top of the dough and begin to shape into a rectangle about ¾" tall.
- Cut the dough or use a biscuit cutter to the desired number of biscuits. I usually make six, square biscuits so I don't have leftover dough.
- Transfer to the prepared baking sheet and bake for 12 minutes or until the tops begin to turn brown.
- If desired, brush the tops of the biscuits with melted butter after removing from the oven.
