Roasted Garlic & Italian Herb Fillets with Lemon Basil Zucchini "Noodles"

Ingredients

  • 1 pack Gorton's Real Solutions Roaster Garlic & Italian Herb fillets
  • 2 zucchinis between 6 and 7 inches long cut into noodles
  • 2 tablespoons olive oil or combination oil and butter
  • several basil leaves cut into thin slices
  • 1/4 cup parmesan cheese
  • juice and zest of one lemon
  • salt and pepper to taste

Instructions

  • Preheat the oven as directed on the packaging
  • Once the fish are in the oven, prepare the zucchini. Use a julienne peeler or grate the zucchini along its length into long strips. Reserve the portion with the seeds for another use.
  • Flip the fillets as directed on the packaging.
  • Heat the oil in a large skillet over medium heat.
  • Saute the zucchini "noodles" until they're as crisp as you desire.
  • Stir in the lemon zest, juice and parmesan cheese.
  • Salt and pepper to taste.
