Roasted Garlic & Italian Herb Fillets with Lemon Basil Zucchini "Noodles"

- 1 pack Gorton's Real Solutions Roaster Garlic & Italian Herb fillets
- 2 zucchinis between 6 and 7 inches long cut into noodles
- 2 tablespoons olive oil or combination oil and butter
- several basil leaves cut into thin slices
- 1/4 cup parmesan cheese
- juice and zest of one lemon
- salt and pepper to taste
Preheat the oven as directed on the packaging
Once the fish are in the oven, prepare the zucchini. Use a julienne peeler or grate the zucchini along its length into long strips. Reserve the portion with the seeds for another use.
Flip the fillets as directed on the packaging.
Heat the oil in a large skillet over medium heat.
Saute the zucchini "noodles" until they're as crisp as you desire.
Stir in the lemon zest, juice and parmesan cheese.
Salt and pepper to taste.
