Spinach & Potato Panini
I used potatoes made without dairy and a vegan mayonnaise for the filling. Don't let that stop you from making this sandwich. While it wouldn't be vegan, it will still be delicious and a great way to use up some leftovers. This will make 2 sandwiches. Cook them like you would a grilled cheese if you don't have a panini press.

- 1/2 cup mashed potatoes
- 1/2 cup cooked spinach
- salt pepper and other seasonings to taste (try cumin or adobo)
- vegan mayonnaise
- 4 slices sourdough or similar bread
Heat the panini press.
Combine the potatoes, spinach and any seasonings. Add vegan mayo if it seems dry.
Spread each piece of bread with vegan mayo if desired.
Top with potato/spinach mixture and spred close to the edge.
Top with another slice of bread.
Cook on the panini press until heated through and nice marks appear on the bread.
