Oven Fried Sweet Potatoes with Maple Bacon Mayo

Ingredients

  • 2 large sweet potatoes sliced into rounds about 1/2" thick
  • olive oil
  • salt pepper, fresh herbs to taste (we used thyme)
  • 6 - 8 pieces of cooked bacon reserve 2 for the mayo
  • 1 cup mayonnaise
  • 2 - 3 teaspoons maple syrup the real stuff if you have it
  • pinch of red pepper flake or very small amount of red chili paste
  • splash of vinegar
  • chopped parsley for garnish optional

Instructions

  • Preheat the oven to 400°F (200° C) and prepare two baking trays
  • While the bacon is cooking, wash, trim and slice the sweet potatoes into rounds and put the slices into a large mixing bowl.
  • Drizzle a tablespoon of olive oil over the top and season the lot with salt, pepper and fresh herbs. Use your hands to toss until all the slices are coated with the seasoning.
  • Transfer to the baking trays and bake for 30 - 40 minutes, checking and turning the slices as needed after 20 minutes.
  • Meanwhile mix the mayo, maple syrup, red pepper flake and vinegar in a small mixing bowl.
  • Mince two slices of bacon very fine and stir into the mayo.
  • Taste and adjust the seasoning. The red pepper shouldn't be the predominant flavor, add more mayo, maple syrup or vinegar as needed.
  • Transfer the cooked sweet potato rounds to a tray. Cut or break the remaining bacon slices into pieces and distribute over the top. Drizzle the bacon maple mayo over everything and garnish with the chopped parsley as desired.
  • Serve the remaining mayo on the side. It's good on sandwiches, too.
