Lemon Pomegranate Parfaits

Ingredients

  • Juice and zest from two lemons
  • 3 cups plain yogurt Greek or natural; fat free or not
  • 3/4 cup sweetened condensed milk more or less
  • pomegranate arils cleaned
  • pistachios shelled and chopped

Instructions

  • Mix all the ingredients together in a medium bowl. Reserve some of the lemon zest for garnish.
  • Add more sweetened condensed milk if desired to thicken the cream or add more sweetness
  • Alternate the cream with the pomegranate arils. Top with pistachios.
