Preheat the oven to 350°F/180°C and prepare a 9x5" loaf pan with baking spray
Measure the dry ingredients in a large mixing bowl. Stir the cheese in and use your fingers to break up any clumps.
In a separate bowl, beat all the wet ingredients together.
Mix the wet ingredients into the dry until just mixed, a few lumps are ok.
Transfer to the loaf pan and bake for 45 - 50 minutes. Cover the top with foil if necessary to prevent over browning.
After baking remove the loaf from the pan and allow to cool completely before slicing.
