Here we are, eight months into 2020 and I am ready for a change of pace. I want new flavors, new textures, NEW! DIFFERENT! I found what I was looking for in a delicious avocado sandwich.
The herby, peppery sharpness of the arugula, contrasts with the creamy texture of the avocado and the surprise crunch of pistachios. It’s just the change of pace I need.
You need a good foundation
The foundation of a good sandwich is the bread. I used tender ciabatta rolls. After toasting, the bread is still tender enough to prevent the avocado from squishing out the sides when you bite into it.
You could substitute store bought guacamole for the avocado if you like. I prefer to control the texture by mashing the diced fruit with a fork. Adding some onions and seasoning with cumin, salt, pepper and lime juice gave me a flavor boost.
Arugula or rocket?
Arugula is a bitter green used in cooking all over the world. It is thought to have originated in the Mediterranean region. In Italian it’s called rucula or ruchetta from which the English words are derived. Where I live in Spain it’s commonly sold in small bags on its own or mixed with another tender green like spinach.
Normally I prefer to eat arugula in a mix. Sometimes arugula on its own is a bit overwhelming. That wasn’t the case here, though. However, if you can only find the bitter green in lettuce blends, it’s not a big deal. The sandwich will still taste awesome!
An avocado sandwich with crunch
I like the contrast of textures in this sandwich. There’s creamy and cool from the avocado and there’s different types of crunch from the toasted bread, the crisp arugula and onion. Last but not least, there’s more crunch and flavor from the chopped pistachios. All the flavors and textures combine to make a delicious vegetarian sandwich.
Ingredients
- 1 small ciabatta roll or similar per person toasted
- 1 medium avocado, peeled and pitted
- 1/4 cup finely chopped onion
- lime juice of vinegar to taste
- olive oil to taste
- salt, pepper, cumin to taste
- 1 handful pistachios, shelled and roughly chopped
- 1 handful fresh arugula
Instructions
- Roughly mash the avocado with onion and lime juice, olive oil, salt, pepper, cumin, etc
- Drizzle the bread with olive oil
- Layer the arugula on the bottom.
- Top with a portion of the avocado.
- Add chopped pistachios.
- Slice and serve.
