Stop making a face. Fried eggplant with honey and feta cheese will knock your socks off. It’s quick and easy to make and gluten free if you use rice flour to make the batter. In Spain they call it berenjenas con miel and you’ll see the eggplant sliced into rounds or batons, depending on the chef.
My daughter gave me a couple small eggplants. They came from her very first garden. I used two to make this lovely dish. Plan on two small (about half a pound) eggplants for four people.
Feel free to use your favorite tempura style batter if you prefer. I used a cup of rice flour and a cup of water whisked together and seasoned with smoky pimentΓ³n and salt. This was more than enough for two baby eggplants. It fried up delightfully crispy.
I used olive oil for frying, but think an oil with a higher smoke point would have been better. This isn’t a dish you can walk away from while the oil is hot.
Ingredients
- 2 small eggplants sliced into 1/2" rounds
- 1 cup rice flour
- 1 cup cold water
- 1 teaspoon smoky paprika (we use pimentΓ³n de la vera)
- 1/4 teaspoon salt
- oil for frying
- honey for drizzling
- feta cheese for crumbling
- chopped parsley for garnish
Instructions
- Mix the rice flour, water, salt and smoky paprika to make a thick batter.
- Measure the oil in a large skillet. You want it about a 1/4" deep. It's hot when the oil seems to ripple on the surface. You could also drop some batter in. If it sizzles, the oil is ready.
- Working in batches, coat the eggplant in the batter and fry on both sides until golden brown, about 3 minutes per side.
- When finished, remove the golden brown disks of delight to a paper towel lined plate. Sprinkle with a little salt.
- To serve, place a few slices on a plate and drizzle with a little honey. Crumble a little feta cheese over top. Top with chopped parsley.
Eggplant with honey. One taste and you’ll be a believer.
