Happy Earth Day, everyone! Today I have another meat free recipe using a commercially available product. These crabless sliders with curried mayo and apple salsa have great flavor. You’ll want to add them to your rotation of Meatless Monday meals.
This recipe was inspired by a tapa we had called MiniAtun. It featured a small patty made from tuna served on a little brioche roll with curried mayo and a slice of grilled apple. We felt the crabless cakes from Gardein made an excellent substitute for the tuna. They’re made from wheat protein and definitely taste like seafood. You can visit the product page to read more about them and find more recipes. What I like most about them is they only take minutes to prepare! Once they’re heated through, they’re ready to serve.
As you can see in the photo, the crabless cakes are smaller than the potato rolls I chose. It was a simple matter of smashing them until they were large enough to fit on the rolls. Maybe you’ll have a wider selection of rolls to choose from and can find something closer in size.
The curried mayo couldn’t be simpler to put together. It’s just your favorite mayonnaise with your favorite curry powder (hot, sweet or mild) and some lime juice stirred in. And the apple salsa gives an opportunity to work on your knife skills as you’ll want to finely dice the apples, onions and peppers, if using.
Ingredients
For the curried mayo
- 1/2 cup mayonnaise
- 2 teaspoon curry powder choose your favorite and adjust the amount to suit
- juice of 1/2 lime
For the apple salsa
- 1 generous cup finely diced apple choose a crisp/tart variety
- 1/4 cup finely diced red onion
- 1/4 cup chopped cilantro or parsely
- 1 tablespoon finely chopped green or red chili about 1/2 seeded jalapeno, optional
- juice of a lime OR 2 tablespoons white balsamic vinegar
- 1 tablespoon honey adjust to taste
- salt and pepper to taste
For the sliders
- 1 pack Gardein crabless cakes
- 1 pack potato rolls or other slider sized rolls of your choice
Instructions
Make the mayo
- Mix all the ingredients in a small bowl and set aside. If making more than a couple hours ahead, cover and place in the fridge until needed.
Make the salsa
- Mix all the ingredients in a bowl. Adjust the seasonings to taste. Store in fridge until needed.
Assemble the sliders
- Toast the buns and heat the crabless cakes over medium heat until warmed through and starting to take on some color. If necessary, smash the cakes a little to make them large enough to fit on the buns.
- Spoon some mayo onto the bottom of a roll, add a spoonful of apple salsa, top with a crabless cake, then a little more mayo on the top as desired.
- Serve immediately.
I used a tabletop griddle to prepare my sliders. If you don’t have one, a large skillet will work great.
A pack of Gardein crabless cakes contains 10 pieces, which was more than enough for two people. We liked the combination of sweet/hot curried mayo and salsa with them. The patties would also be delicious with your favorite seafood or tartar sauce so you have lots of options for serving them.
