Want a tasty side dish that also doubles as a meal? Give this Corn and Potato Skillet a try. Corn and basil give it a fresh summer flavor while the fried potatoes add some bulk. You could easily make a meal out of it if you serve it with a plate of sliced tomatoes or a salad, but it would also be good plated up next to a delicious pork chop or other type of meat.
The original recipe comes from my blogging friend Debi from Life Currents. Debi’s blog features mostly vegetarian recipes plus projects she and her husband Dan have completed around their home. She threw together her Corn Saute with Fresh Basil and Potatoes one day when she wanted to get dinner on the table in a hurry. We’ve all been there, right? At some point I pinned it to my Vegan Before Six Friendly Board which features recipes that can easily be veganized. I’m happy to share her recipe with you as part of the ongoing Pinterest challenge I’ve been participating in.
Debi used baked potatoes to make her saute. I used some boiled potatoes I had leftover from another meal. Either way, the potatoes need to be cooked. The corn can be cut from the cob, defrosted frozen corn, or come from a can. I used a pack of frozen corn and cooked it for half the recommended time in the microwave before draining it and continuing the recipe.
Ingredients
- 3 large potatoes peeled, cubed and cooked (between 2 - 3 cups)
- 1 pack frozen corn defrosted (about 3 cups kernels)
- 1 teaspoon flour
- 1/4 cup milk or half and half
- Chopped fresh basil
- oil for shallow frying
- salt and pepper to taste
Instructions
- Heat a large skillet over high heat (brush or spray the bottom with oil if necessary). Add the corn kernels and cook for several minutes until they take on some color and begin to sputter and pop.
- Stir in a tablespoon of butter, then sprinkle the flour over the corn and cook briefly before adding the milk or half and half.
- Lower the heat and allow the milk to reduce, stirring occasionally. Season with salt and pepper. Stir in the basil then remove the corn to a bowl while you cook the potatoes.
- Add enough oil to cover the bottom of the same skillet and turn the heat up to medium high.
- Add the potatoes and leave them alone for a few minutes to brown. Continue to cook, stirring once in a while, until the potatoes are warmed through and golden colored on all sides.
- Return the corn to the skillet and stir gently to combine. Add small amounts of butter or milk as desired to create the amount of sauce you like. Season again before serving.

I’m trying to cut down on my carb intake right now but this is rather tempting!! Fresh corn is a weakness of mine and would be so good in this skillet. Love that you offer up substitutions for so many different needs.

Yes, it’s definitely not an everyday dish if you’re counting carbs. If you’re in “maintenance mode” it would be okay as long as you watched the portion size. Hope you get a chance to try it π
