You are in control of the ingredients when you make my cookies and cream parfaits, also known at The Grey Stuff.
On March 17, Disney Studios will release the live version of Beauty and the Beast. I remember when it was first released. It was an enchanting film and it won my heart with the opening song, “Belle.” Our heroine strolls through a “poor, provincial town” and is revealed through song to be a dreamer who is regarded as a bit of an oddity by the town folk. I didn’t need the excuse of a five year old to watch the movie multiple times.
Enjoy a little musical interlude…
This is the second month I’ve participated in #MovieMonday. Last month we celebrated The Princess Bride and I did a craft over on Life Beyond the Kitchen. This month after some consideration, I decided to make The Grey Stuff mentioned in the song “Be Our Guest” (can’t wait to see it in the live movie!).
Naturally I searched on Pinterest and came up with a few versions that used non dairy whipped cream and pudding mix. I thought I could do better. My version of The Grey Stuff is still loaded with sugar and fat, don’t get me wrong. The color comes from mixing chocolate sandwich cookies with cream cheese and whipped cream. So, while you’re stuck with the sugar in the cookies, you have control over the amounts added to the rest of the dessert. All in all, I’d pit my cookies and cream parfaits against Mrs. Potts’ any day.
Ingredients
- 2 dozen creme filled chocolate cookies crushed
- 3 ounces cream cheese
- 6 ounces whipping cream
- 1/2 - 1 cup granulated sugar
- 1/4 - 1/2 cup powdered sugar
- 2 teaspoons vanilla
Instructions
- Use a food processor to turn the cookies into fine crumbs.
- Beat the cream cheese with the granulated sugar and half the cookie crumbs until well combined.
- Beat the cream with the powdered sugar and vanilla until peaks form.
- Fold the whipped cream into the cream cheese mixture.
- Alternate layers of the remaining cookie crumbs and the grey stuff in whatever fancy glass containers you may have. Top with more cookie crumbs.

Parfaits are great! They were really popular company food when I was a kid — my mom served them for dessert a lot. Don’t see them as much these days — too bad. These look great — fun idea, super flavors. Thanks!
