You won’t miss the bun with this tasty low carb cheeseburger salad with bacon croutons, sesame seeds and its own special sauce.
I was inspired by this salad from The Country Cook which features an easy to make salad dressing that you’ll want to double so you can use it in other meals.
The dressing is simple to make with a food processor. Just whiz the ingredients together and season to taste. It will last for a week or more in the fridge.
The salad itself has all the flavors of your favorite bacon cheeseburger without the bun. You’ll love it!
Ingredients
For the dressing
- 1 cup mayonnaise
- a small handful roughly chopped pickles I used sugar free bread and butter slices
- a heaping teaspoon of your favorite mustard
- 1/2 tsp smoked paprika
- optional dried onion or garlic powder to taste
- salt and pepper to taste
- a splash of your favorite vinegar I used white balsamic
- a splash of salad oil I used sunflower oil
- sweetener to taste your favorite low carb sweetener will work fine
For the salad
- Cooked and seasoned ground beef 1 cup is good for 2 - 3 servings
- 4 slices cooked bacon chopped (I used kitchen scissors)
- salad greens chopped or torn as necessary
- 1 small tomato diced
- 1 small onion sliced into petals
- shredded cheddar cheese
- diced pickles about 1/4 cup
- toasted sesame seeds
Instructions
Make the dressing
- Put the mayo, pickles, mustard, paprika and other seasonings in the bowl of a food processor and blitz until combined. Scrape the sides as needed.
- Add the sweetener and enough vinegar and/or oil to give the dressing a pourable consistency.
- Blitz again and adjust the seasonings to suit.
Assemble the salad
- Brown or reheat the hamburger if necessary.
- Arrange the lettuce on a platter and top with the burger.
- Scatter the "fixings" on top.
- Drizzle on the salad dressing and garnish with the bacon croutons and sesame seeds.
The dressing is yummy on steamed veggies or as a dip. It’s also good on chicken or fish as a sauce.
Having the bacon and hamburger already cooked and ready to go makes this an easy to assemble, quick meal to eat at home or take on the road.
