When Rick and I were in Porto last week we had the opportunity to try serradura, a typical Portuguese dessert made from sweetened whipped cream layered with cookie crumbs. Serradura means sawdust which describes the fine crumbs. This is a fun and easy dessert.
If you can whip cream and crush some cookies, you can make serradura. The one we were served had a fruity glaze on top, but this recipe used chocolate shavings. I imagine you could flavor the whipped cream as well (see this post on Easy Chocolate Mousse for inspiration).
We were served our serradura layered in a glass. I’m sure you could use parfait glasses or even create layers in a trifle bowl or glass loaf pan and serve from there instead of individual portions. We have a set of short 8 ounce glasses that are perfectly sized for this type of dessert. After whipping a cup of cream we had enough to fill two glasses plus another small one that was eaten before the photos were taken.

We had Maria cookies on hand and needed about a dozen to make enough crumbs. The glaze was made with peach preserves, but if you have something else you like, feel free to use it. I’m sure it will be great!
Ingredients
- 1 cup whipping heavy cream
- 1/4 cup sweetened condensed milk substitute 2 tablespoons sugar if you prefer
- 1 teaspoon vanilla
- 1 dozen Maria cookies crushed fine
- 1/2 cup peach preserves + 1 teaspoon of water
Instructions
- Crush the cookies until very fine. I used a food processor, but the old fashioned method of putting them in a plastic bag and crushing them with a rolling pin works, too.
- Whip the cream with the vanilla and condensed milk until peaks form.
- Form the layers by alternating cookie crumbs and whipped cream. Leave some room at the top for the glaze.
- To make the glaze, stir the water into the preserves and heat in the microwave for less than a minute until it becomes easy to spread. Spoon onto the serradura and gently spread.
- Chill in the fridge for several hours to set.
