Fried brie with tomato marmalade tastes even better than it looks! Don’t let it’s fancy appearance fool you, it’s surprisingly simple to prepare. We had it as part of a meal during our recent trip to the Costa Brava. The pieces were cut large for single servings, but they could be made smaller and served as part of a buffet if desired.
When we first sat down to look at the menu I was interested in something else until I saw the waiter carry an order to another table. It had a colorful presentation which I’ve attempted to recreate.
We were served brie but I’m sure any similar cheese will work, as would sliced mozzarella. You might also want to experiment with Mexican cheeses like queso fresco. Slice it crosswise and run it through a standard breading station: seasoned flour, egg wash, then bread crumbs.
You can make your own tomato marmalade by cooking plain tomato puree with an equal amount of sugar (the amount will depend on the acidity of the tomatoes) until shiny and jammy. An alternative would be my red pepper jam. If you’re not up to cooking a small batch of jam, go with store bought as I did. Cherry or raspberry jams go well with cheeses.
Ingredients
- 4 ounces 120 grams brie, sliced crosswise (I got 4 slices)
- 1/2 cup flour seasoned with salt pepper and smoky paprika
- 1 egg beaten with 1 tablespoon water
- 1 cup breadcrumbs mixed with crushed dried parsley
- oil for frying
- tomato marmalade
- orange slices for garnish
Instructions
- Dredge the sliced cheese in flour, then egg wash, the generously coat with bread crumbs. Transfer to a tray and let stand for a few minutes while the oil is heating.
- Cover the bottom of a medium skillet with 1/4" of oil and heat until the surface shimmers.
- Carefully arrange the cheese in the pan and fry about 3 minutes per side, taking care when turning. The breading should be golden brown and the cheese will be soft but still retain its shape.
- Drain on paper towels.
- Serve with tomato marmalade served on top of the orange slices.
Wouldn’t these be awesome at a dinner party? One piece might be enough per serving if you have a large meal planned. I haven’t tried it, but I’m sure these can be made ahead and reheated in the oven or on top of the stove just before serving. They aren’t bad at room temperature, either.
If you’re interested in eating in a more casual setting, serve the fried brie with slices of crusty bread, along with some olives and almonds. Don’t forget to open a bottle of your favorite wine. Enjoy!

I imagine it would depend on what you used, Josephine. I wouldn’t use chickpea flour or pork rinds for example, but rice flour and GF breadcrumbs are a different story. If you try, please let me know π
