Avocado and Arugula Sandwich
The combination of flavors and textures makes for an excellent vegetarian sandwich

Ingredients
1
small ciabatta roll or similar per person
toasted
1
medium avocado, peeled and pitted
1/4
cup
finely chopped onion
lime juice of vinegar
to taste
olive oil
to taste
salt, pepper, cumin
to taste
1
handful
pistachios, shelled and roughly chopped
1
handful
fresh arugula
Instructions
Roughly mash the avocado with onion and lime juice, olive oil, salt, pepper, cumin, etc
Drizzle the bread with olive oil
Layer the arugula on the bottom.
Top with a portion of the avocado.
Add chopped pistachios.
Slice and serve.
Notes
Feel free to add sliced tomatoes or anything else that appeals to you.
