Avocado and Arugula Sandwich

The combination of flavors and textures makes for an excellent vegetarian sandwich

Ingredients

  • 1 small ciabatta roll or similar per person toasted
  • 1 medium avocado, peeled and pitted
  • 1/4 cup finely chopped onion
  • lime juice of vinegar to taste
  • olive oil to taste
  • salt, pepper, cumin to taste
  • 1 handful pistachios, shelled and roughly chopped
  • 1 handful fresh arugula

Instructions

  • Roughly mash the avocado with onion and lime juice, olive oil, salt, pepper, cumin, etc
  • Drizzle the bread with olive oil
  • Layer the arugula on the bottom.
  • Top with a portion of the avocado.
  • Add chopped pistachios.
  • Slice and serve.

Notes

Feel free to add sliced tomatoes or anything else that appeals to you.
