Mussels in Tomato Sauce

Mussels love tomato sauce! Serve them over any type of pasta you have on hand.

Ingredients

  • 1 medium onion chopped
  • 1 small bell pepper chopped
  • 1 - 2 tomatoes, seeded and chopped (about a cup)
  • 2 - 3 cups tomato sauce
  • pinch red pepper flake
  • 1/2 teaspoon dried thyme optional
  • 1/2 teaspoon dried oregano optional
  • salt and pepper to taste
  • olive oil
  • 1 - 2 pounds mussels prepared for cooking (enough for four people)
  • pasta for four people

Instructions

  • Bring a large pot of water to a boil for the pasta.
  • In your largest skillet, add a pinch of red pepper flakes to a couple tablespoons of olive oil.
  • Saute the onions and peppers over medium high heat.
  • When softened stir in the tomato sauce and chopped tomatoes. Add additional seasoning as desired.
  • Add the pasta when the water begins to boil. Reduce the heat under the sauce to a simmer.
  • Add the mussels to the sauce when the pasta is ready. Cover the pan with a lid,, then drain the pasta.
  • The mussels should be cooked after 5 minutes. Discard any that don't open.
  • Serve over pasta along with some bread to soak up the sauce and a bowl to collect the empty mussel shells.
