Dredge the sliced cheese in flour, then egg wash, the generously coat with bread crumbs. Transfer to a tray and let stand for a few minutes while the oil is heating.
Cover the bottom of a medium skillet with 1/4" of oil and heat until the surface shimmers.
Carefully arrange the cheese in the pan and fry about 3 minutes per side, taking care when turning. The breading should be golden brown and the cheese will be soft but still retain its shape.
Drain on paper towels.
Serve with tomato marmalade served on top of the orange slices.
