Ham and Egg Roll Ups

Ingredients

  • olive oil or butter for saute
  • 1/4 cup diced onion
  • 1 small tomato seeded and diced
  • 2 large handfuls baby spinach
  • salt pepper, other seasonings to taste
  • 2 large or 3 medium eggs beaten
  • 1/2 cup shredded cheese
  • 4 or 8 slices of deli ham

Instructions

  • Saute the onion in a small amount of butter or olive oil until soft.
  • Add the tomatoes and spinach and stir until the spinach is wilted and the tomatoes are heated through.
  • You can scramble the eggs and cheese with the veggies or separately, I do it all together. The eggs should be soft and fluffy.
  • Season to taste
  • To assemble, place a slice of ham on a flat surface with the short end facing you. If the pieces are short, overlap the slices to increase the length.
  • Spread the filling across the bottom of the slice and roll up. Secure with toothpicks are required.
  • Repeat with the rest of the ingredients to make 4 roll ups.
  • Serve as is or prepare a square baking dish with cooking spray and arrange the roll ups seam side down. Scatter some more cheese on top and bake in a 375F oven until the cheese has melted and the ham takes on a little color.
