BBQ Carrot Sandwiches with Slaw

Ingredients

  • 1 pound 5 or 6 large carrots, peeled and shredded
  • 1 medium red onion peeled and thinly sliced
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • 6 soft dinner rolls potato rolls are good
  • 1/3 - 1/2 cup barbecue sauce depends on how saucy you like it
  • 1 - 2 cups coleslaw

Instructions

  • Preheat the oven to 350°F/180°C and prepare a baking tray by lining it with parchment or using cooking spray.
  • Spread the shredded carrots and slice onions on the baking tray. Drizzle with olive oil, season with salt and pepper. Mix well then bake for about 30 minutes, stirring a couple times, until the carrots and onions have softened and taken on some color. You want them to be soft, but still have a little bite to them, like cooking pasta al dente.
  • Transfer to a large skillet and stir in the barbecue sauce. Heat through.
  • Divide the bbq carrots among the rolls and top with the coleslaw before serving.
