BBQ Carrot Sandwiches with Slaw

- 1 pound 5 or 6 large carrots, peeled and shredded
- 1 medium red onion peeled and thinly sliced
- 1 tablespoon olive oil
- salt and pepper to taste
- 6 soft dinner rolls potato rolls are good
- 1/3 - 1/2 cup barbecue sauce depends on how saucy you like it
- 1 - 2 cups coleslaw
Preheat the oven to 350°F/180°C and prepare a baking tray by lining it with parchment or using cooking spray.
Spread the shredded carrots and slice onions on the baking tray. Drizzle with olive oil, season with salt and pepper. Mix well then bake for about 30 minutes, stirring a couple times, until the carrots and onions have softened and taken on some color. You want them to be soft, but still have a little bite to them, like cooking pasta al dente.
Transfer to a large skillet and stir in the barbecue sauce. Heat through.
Divide the bbq carrots among the rolls and top with the coleslaw before serving.
