Today I wanted to share a few veggie sandwiches we’ve been cranking out in the Flexitarian Kitchen on the panini press. Starting from the left there’s a Caprese Panini with tomato, fresh mozzarella and garden fresh basil. Next to that is a delicious arugula, spinach, cherry and brie panini that I just loved. The next sandwich has caramelized onions, peppers and mushrooms with salty provolone cheese…sort of a Philly No-Steak. The last sandwich is a vegan potato and spinach panini that’s easy to make from leftovers. All I did was stack the fillings on and stick the sandwich on the panini press. Sometimes I’ll remove some of the bread to help prevent the fillings from squishing out. It depends on the roll.
Other great fillings for veggie sandwiches are raw vegetables like thinly sliced carrots and cucumbers, avocado, hummus and cashew cheese. Don’t forget the old standard; peanut butter and jelly.
