Gah! This is crunch week for us. My daughter is getting married this weekend and we are down to the wire! They are keeping it simple, but even a simple wedding for 125 people requires a lot of logistics: tables, chairs, beer (can’t forget that!), flowers, decorations, food, cakes, games, photographer, out of town guests, and avoiding familial acrimony (long story but one part of the family doesn’t speak to the other part).
Following the wedding, Rick and I will be heading back to our apartment in Spain. I’m ready to go back to my adopted country.
Time and tide and the calendar wait for no woman, and once again it’s Meatless Monday.
This week instead of a recipe, I want to talk about a little more about logistics. Did you know it takes about 20 pounds of potatoes to make enough potato salad for 100 people? I know this because I will be peeling a bunch of potatoes pretty soon. Or that it will take around 60 gallons of beer (about 4 kegs) to keep our guests “watered” for the 5 or more hours of celebration?
At some point during the day, hopefully all of the guests will take a shower. It takes anywhere from 25 to 40 gallons of water to take a 10 minute shower (source). Now, consider this statistic:
Makes you scratch your head, doesn’t it? There are about 500 pounds of saleable meat per steer. You do the math. It takes a lot of water to grow crops for feed and make sure cattle get enough to drink.
When you look at the amount of water and energy required to produce a pound of beef and consider there are similar water and energy costs involved with other meat animals, going meatless one day a week is more than a boon to our personal health; it’s a stewardship issue.
