Welcome to another Meatless Monday Link Party! Another month has gone by and so this week is all about showcasing my favorites from September.
Starting from the top left corner of the image and working clockwise we have:
PB&J Banana Bread sandwiches from Shaina of Take a Bite Out of Boca Shaina made these as part of the #LeftoversClub challenge. It was genius to spread her banana bread with peanut butter and jelly. The sandwich caught my eye right away and I’m a little bit envious of her partner who had the yumminess delivered to her door. Fortunately the world is full of overripe bananas just waiting to be turned into banana bread!
Next up is Broccoli Cheddar Quinoa Bites from Christi of Grow Eat Glow. She developed the recipe in response to a “No White Carbs Challenge” and found out (as many others do) that it’s very easy to fill your plate with products made from white flour, white rice and sugar. You’ll want to keep this recipe on hand and use it as a base for other, similar recipes.
Tina Muir’s Pumpkin Pie Recovery Pancakes are shown in the bottom right corner. They’re full of protein and good carbs for fueling a serious runner like Tina, who’s training for the Chicago Marathon. Tina also hosts her own Meatless Monday link party and I encourage you to hop on over to find more Meatless Monday inspiration!
Finally, we have Avocado Mango Spicy Veggie Rolls from Maria of The Good Life. Like Maria, Rick and I are intrigued by the tastes of Thailand and Vietnam. These are made with rice paper for an authentic touch, but a tortilla or other flatbread will work as well. Don’t skimp on the sriracha!
