Summer fruits are loaded with refreshment. When the heat is on there’s nothing more satisfying than a yogurt and fruit breakfast parfait to revive your body and bring a smile to your face.
I’d never considered myself a melon person until I tried a variety called “Canary Melon.” It’s a yellow skinned, football shaped fruit with light colored flesh. Since that first bite, I’ve come to love all sorts of melons. They’re naturally low in calories but loaded with essential nutrients like Vitamin A, Vitamin C and potassium.
When paired with plain Greek yogurt, fresh mint and a handful of pistachio nuts you’ll have added protein and calcium for an excellent start to the day. But don’t limit yourself to melon. Any fruit and nut combination that appeals to you will work; try cherries and almonds, or peaches and pecans. Add a some granola type cereal for a little more crunch or a drizzle of honey for more sweetness.
- 1 cup plain, nonfat Greek yogurt
- 1 cup or more melon, cut into bite sized pieces
- handful of pistachios, shelled and roughly chopped
- 3 - 4 mint leaves, chopped
- Combine all ingredients in a bowl.
- Eat and smile.
