I was really, really tempted to call these bbq carrot sandwiches Carrot Joes, because they’re very similar to sloppy joes. No matter what you call them, they’re delicious and perfect for a Meatless Monday meal or as a meat free alternative for a buffet spread.
Once again I searched through my Vegan Before Six Friendly Pinterest board to find a recipe to share for this month’s Pinterest Challenge. This recipe from Veganosity caught my eye as did the pack of carrots in the bottom of the veggie drawer of my fridge. It’s super simple to make and something I’ll happily make again.
I always seem to have carrots available, I’ll bet you do, too. The preparation for bbq carrot sandwiches couldn’t be simpler, especially if you already have barbecue sauce on hand. You can make your own, too. This Korean style sauce would be good with the carrots. I used leftover sauce made for another recipe.
We like a standard coleslaw, following my mother’s recipe. But again, there’s no reason you can’t use a store bought slaw. If you’re feeling fancy try this apple fennel slaw, for more veggie goodness.
Ingredients
- 1 pound 5 or 6 large carrots, peeled and shredded
- 1 medium red onion peeled and thinly sliced
- 1 tablespoon olive oil
- salt and pepper to taste
- 6 soft dinner rolls potato rolls are good
- 1/3 - 1/2 cup barbecue sauce depends on how saucy you like it
- 1 - 2 cups coleslaw
Instructions
- Preheat the oven to 350°F/180°C and prepare a baking tray by lining it with parchment or using cooking spray.
- Spread the shredded carrots and slice onions on the baking tray. Drizzle with olive oil, season with salt and pepper. Mix well then bake for about 30 minutes, stirring a couple times, until the carrots and onions have softened and taken on some color. You want them to be soft, but still have a little bite to them, like cooking pasta al dente.
- Transfer to a large skillet and stir in the barbecue sauce. Heat through.
- Divide the bbq carrots among the rolls and top with the coleslaw before serving.
We made a meal of our sandwiches, rounded out with some chips and a couple cold beers. The bbq carrot sandwiches were surprisingly filling. Rick pronounced them to be “not too shabby”. That’s high praise for him! Now that you know how easy they are to make, I hope you give them a try.

I love the idea of a meatless sloppy joe! My boys request sloppy joes quite often but I honestly don’t love them. I could see myself making these just for me next time! pinned.
